Citation: At approximately 0504 hours, while performed a scheduled review and observation component for the 01C02 procedure in the Evisceration Department, I observed water dripping from two screens to the ventilation system at hock cutter machine and rehang system. At close examination, I observed water dripping inches from the carcasses on the rehang system line approximately every thirty (30) second. I observed condensation on an overhead gray pipe at the same location. I immediately took a regulatory control action by stopping production in the Evisceration Department on. I informed (VP Operation) and (First Processing Superintendent) of my observation. I rejected ventilation system for unsanitary condition with US Rejected Tag B39 801325. Two screens to the ventilation system were very dirt and dusty. After sanitary conditions were restored and the process was under control, I relinquished the regulatory control actions on the ventilation system. There was approximately fifteen (15) minutes downtime with this noncompliance. A check of the plant SSOP's and GMP forms, plant's Operational Sanitation record (Evisceration) shows no documentation for the above noncompliances. Establishment management has received oral and written notification concerning this noncompliance. This document serves as a written notification that your failure to comply with regulatory requirement could result in additional enforcement action described in 9 CFR part 500.


416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
