Violation: 381.76(b)

Citation: At approximately 0713 hours, while performing the presentation test on the west evisceration line, inspection station # one, I observed the errors, one (1) "not hung by two legs", one (1) "viscera not uniform", and one (1) "no viscera". The conformance level (cl) of all errors was thirty seven (37). The line speed (ls) was birds per minute (bpm). As the cl of twenty five (25) to thirty nine (39) on the test requires correction and retesting, Ms. the 1st processing manager, was notified of the findings. A plant Q.A. technician performed a retest at 0719 hours and observed the errors of one (1) "contamination inside carcass" and one (1)" no viscera". The cl of the errors amounted to As the cl of or above warrants ls reduction by 10%, the ls was reduced from bpm to bpm. At 0730 hours, a 2nd retest was performed by the plant Q.A. technician at ls of bpm.The cl of the errors observed was that is acceptable. The ls was accelerated back to bpm. The 3rd retest at ls of bpm resulted in cl of 17 that is also acceptable. This retest concluded the presentation retesting and the ls was allowed to remain at bpm.

Regulation:

381.76(b) Presentation: Each inspector shall be flanked by an establishment employee assigned to be the inspector’s helper. The one inspector on the SIS–1 line shall be presented every bird. Each inspector on the SIS–2 line shall be presented every other bird on the line. An establishment employee shall present each bird to the inspector properly eviscerated with the back side toward the inspector and the viscera uniformly trailing or leading. Each inspector shall inspect the inside, viscera, and outside of all birds presented.
