Violation: 381.76(b)

Citation: At approximately 2103 hours while performing presentation test on the chicken carcasses on the west evisceration line, inspection station # 1, I observed four (4) errors of "viscera not uniform", and one (1) "no viscera". The conformance level (cl) of all the errors was fifty two (52). The line speed (ls) was birds per minute (bpm). As the cl of forty or above on a presentation test requires ls reduction by 10% of the current speed, the ls was reduced from bpm to bpm. Plant management was notified of the findings for correction. A plant Q.A. technician performed the retests that I monitored. The first retest at approximately 2111 hours at ls of bpm was at acceptable cl. This allowed the ls restoration back to bpm. The second retest also was at acceptable cl. This allowed the ls stay at bpm and end of retest phase.

Regulation:

381.76(b) Presentation: Each inspector shall be flanked by an establishment employee assigned to be the inspector’s helper. The one inspector on the SIS–1 line shall be presented every bird. Each inspector on the SIS–2 line shall be presented every other bird on the line. An establishment employee shall present each bird to the inspector properly eviscerated with the back side toward the inspector and the viscera uniformly trailing or leading. Each inspector shall inspect the inside, viscera, and outside of all birds presented.
