Citation: While performing presentation test on on chicken carcasses on the west evisceration line, I observed two (2) "viscera not uniform" and one (1) "no viscera" at inspection station # 2 at approximately 0907 hours. The line speed (ls) was [redacted] birds per minute (bpm).The conformance level (cl) of these errors was thirty six (36). As the cl of twenty five (25) to thirty nine (39) on the test requires notfication to the plant management for correction and retest, I notified Ms. the 1st processing manager of my findings. At approximately 0916 hours, a plant Q.A. technician performed a retest at ls of [redacted] bpm. I monitored the Q.A. technician performing the retest. The technician found two (2) "viscera not uniform" and one (1) "no viscera" at inspection station #1. The cl of the errors was [redacted] As ls at the cl of [redacted] and above on the retest requires reduction by 10% of the current ls, it was reduced to [redacted] by the plant management. Another retest, at approximately 0920 hours, at ls of [redacted] bpm, with a plant employee manually correcting "viscera not uniform", was aceptable. It allowed ls go back up to [redacted] bpm. The last retest at approximately 0927 hours at ls of [redacted] bpm, the plant employee still manually correcting "viscera not uniform" was also also acceptable. It allowed the ls remain at [redacted] bpm and the presentation test phase ended.

Regulation:

381.76(b) Presentation: Each inspector shall be flanked by an establishment employee assigned to be the inspector’s helper. The one inspector on the SIS–1 line shall be presented every bird. Each inspector on the SIS–2 line shall be presented every other bird on the line. An establishment employee shall present each bird to the inspector properly eviscerated with the back side toward the inspector and the viscera uniformly trailing or leading. Each inspector shall inspect the inside, viscera, and outside of all birds presented.
