Citation: At approximately 0315 hours, while walking by the Reprocessing Station, I observed excessive amount of fog at the location of the West and East Lines Rehang Area in the Evisceration Department. At close examination, I observed water dripping from two screens to the ventilation system at hock cutter machine and rehang system onto the poultry carcasses on the East and West Rehang lines approximately every three (3) second. I observed condensation on an overhead gray pipe at the same location dripping on the poultry carcasses. I immediately took a regulatory control action by stopping production in the Evisceration Department. I informed (Evisceration Supervisor) and (First Processing Superintendent) of my observation. I rejected ventilation system for unsanitary condition with US Rejected Tag B39 801356. I retained approximately four hundred (400) poultry carcasses for recondition with US Retained Tag B39 801359. The two screens to the ventilation system were very dirt and dusty. After sanitary conditions were restored and the process was under control, I relinquished the regulatory control actions on the ventilation system. There was approximately thirty (30) minutes downtime with this noncompliance. A check of the plant SSOP's and GMP forms, plant's Operational Sanitation record (Evisceration) shows no documentation for the above noncompliance's. Establishment management has received oral and written notification concerning this noncompliance. This document serves as a written notification that your failure to comply with regulatory requirement could result in additional enforcement action described in 9 CFR part 500. Past Similar NRs - Previous Ineffective Plant Actions: See establishment response to this noncompliance. The establishment previous preventative measure was ineffective or not properly applied to prevent the reoccurrence of this noncompliance. NR: 86-2010 dated 8/10/2010


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
