Citation: At approximately 0913 hours I performed presentation teast on chicken carcasses on east evisceration line. The line speed (ls)was [redacted] birds per minute (bpm). I observed one (1) contamination inside carcass and three (3) viscera not uniform at inspection station # 1. The conformance level (cl) of all errors was thirty nine (39). The plant management personnel were notified of the errors for correction and conducting the retest after the correction. At 0923 hours a plant Q.A. technician performed a retest at ls of [redacted] bpm.. She observed three (3) errors of viscera not uniform and two (2) parts inside at inspection station # 3. The errors cl amounted to twenty six (26). As cl at twenty five (25) or above or three (3) same errors warrant ls reduction by 10%, the ls was reduced from [redacted] bpm to [redacted] bpm. At 0932 the Q.A. technician performed a retest at ls of [redacted] bpm. The technician observed three (3) errors of viscera not uniform at inspection station # 3. The ls was reduced again from [redacted] bpm to [redacted] bpm. At 0942 hours a retest at ls of [redacted] bpm was cl within acceptable cl range. This retest allowed the ls acceleration to [redacted] bpm. The two retests that followed at 0949, and 0956 hours both had acceptable cl. These retests allowed the ls increase, in incements of 10%, to the maximum allowed original ls of [redacted] bpm. The final retest at 1042 at ls of [redacted] bpm was also at acceptable cl and allowed the ls remain at that speed.

Regulation:

318.3 Every official establishment shall designate, with the approval of the circuit supervisor, a dock or place at which products and other articles subject to reinspection under 318.2 shall be received, and such products and articles shall be received only at such dock or place.

381.76(b) Presentation: Each inspector shall be flanked by an establishment employee assigned to be the inspector’s helper. The one inspector on the SIS–1 line shall be presented every bird. Each inspector on the SIS–2 line shall be presented every other bird on the line. An establishment employee shall present each bird to the inspector properly eviscerated with the back side toward the inspector and the viscera uniformly trailing or leading. Each inspector shall inspect the inside, viscera, and outside of all birds presented.
