Citation: At 2309 hours, I performed presentation test on chicken carcasses on the east side evisceration line. At inspection station # 1 I observed two errors of not hung by two legs, one part inside carcass, one carcass mutilated, and one no viscera. The total score was 41.The score of 40 or above conformance level requires immediate line speed reduction of 10% of the current line speed. I notified to first processing manager. The line speed was reduced from [redacted] bpm. [redacted] to bpm. Plant Q.A. technician performed the retest .Her first retest failed resulting further line speed reduction from [redacted] bpm to [redacted] bpm. I monitored Q.A.technician tests. Further tests brought back line speed to [redacted] bpm. At 2346 hours final confirmatory test at speed [redacted] bpm brought process in control. This documents serves as written notification that your failure to comply with regulatory requirement could result in additional enforcement action per 9 CFR 500.

Regulation:

381.76(b) Presentation: Each inspector shall be flanked by an establishment employee assigned to be the inspector’s helper. The one inspector on the SIS–1 line shall be presented every bird. Each inspector on the SIS–2 line shall be presented every other bird on the line. An establishment employee shall present each bird to the inspector properly eviscerated with the back side toward the inspector and the viscera uniformly trailing or leading. Each inspector shall inspect the inside, viscera, and outside of all birds presented.
