Violation: 416.13(c), 416.4(a), 416.4(d)

Citation: At approximately 2001 hours, while performing Line Inspection Duty Station #2 on the East Evisceration Line, I observed black grease marking/spots various sizes on the product contact surface of multiple giblet trays. I immediately took a regulatory control action by stopping production. I informed (Evisceration Supervisor) of my observation. I rejected the East Evisceration Line giblet trays with US Rejected Tag B39 801232. I also informed (Sanitation Manager) of my observation. I stopped production to prevent the black grease from cross contaminated the viscera's. After sanitary conditions were restored and the process was under control, I relinquished the regulatory control actions on the east evisceration line at approximately 2016 hours. . There was approximately fifteen (15) minutes downtime with this noncompliance. A check of the plant SSOP's forms, plant's Operational Sanitation records and GMP Monitor's records (Evisceration) shows no documentation for the above noncompliance's dated 02/22/2011. A check of the plant SSOP records for East Evisceration Department shows the inspection stations fail for black grease. Corrective Measure - rewashed and resanitized. This area was released for inspection at 1846 hours, dated 2/22/2011. Establishment management has received oral and written notification concerning this noncompliance. The Establishment Operational Sanitation and Sanitary Conditions which states under Objective: " [redacted] ". The noncompliance involved direct products cross contamination. This is a failure to comply with 9 CFR 416.4(d), as well as 9 CFR 416.13(c). This document serves as a written notification that your failure to comply with regulatory requirement could result in additional enforcement action described in 9 CFR part 500.


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
