Citation: At approximately 0912 hours I started presentation test on chicken carcasses on the West evisceration line.The line speed (ls) was [redacted] birds per minute (bpm). I observed , on inspection station #3, one (1) carcass "not hung by two legs", two (2) "viscera not uniform", and one (1) "no viscera". The total of all the errors amounted to conformance level (cl) of forty five (45). As the cl at forty or above on a test, requires immediate ls reduction by 10 % of the current ls, the ls was reduced from [redacted] bpm to [redacted] bpm. The retests were performed by a plant QA technician. At 0915 hours, the 1st retest at ls of [redacted] bpm was at acceptable cl. The line speed was turned back up to [redacted] bpm. At 0924 hours, the 2nd retest at [redacted] bpm had one (1) "contamination on viscera", and one (1) "no viscea". The cf of these two errors was twenty six (26). As on a retest, the cl from 25 to 39 warrants ls reduction by 10%, the ls was again reduced from [redacted] bpm to [redacted] bpm. At 0933, the 3rd retest at [redacted] bpm and at 0941 hours, the 4th retaest at [redacted] bpm were at accptable cl. This allowed the ls to remain at [redacted] bpm.


381.76(b) Presentation: Each inspector shall be flanked by an establishment employee assigned to be the inspector’s helper. The one inspector on the SIS–1 line shall be presented every bird. Each inspector on the SIS–2 line shall be presented every other bird on the line. An establishment employee shall present each bird to the inspector properly eviscerated with the back side toward the inspector and the viscera uniformly trailing or leading. Each inspector shall inspect the inside, viscera, and outside of all birds presented.
