Citation: At approximately 1900 hrs., after the plants pre-operational sanitation and prior to the start of operations, I observed the following noncompliance while performing the 01B02 procedure for pre-operational sanitation. In the evisceration department I observed product residue build up on the guide bar in the east line cropper. I immediately notified the sanitation manager of the noncompliance. Also while continuing my pre-op inspection at approximately 2040 hrs. in the deboning department, I observed chicken particles and pieces of fat on the box track. I immediately notified the sanitation supervisor of the noncompliance. And at approximately 2145 hrs. I observed a large piece of chicken fat on a motor drip pan at the upper bird conveyor in the packing department. And an excessive amount of product residue, chicken grease and fat on the east window, cut-up side, of the mezzanine room. was notified of all noncompliance's. All noncompliance's where non-product contact surfaces. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.


416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
