Violation: 381.65(e), 417.2(c)(4)

Citation: At approximately 1127 hours, while performing a Finished Products Standards test on the east evisceration line, I observed fecal material in one of the test carcasses. The fecal material was located inside the left thigh near the ribcage area. It was three drops, the largest approximately 3/8" by 1/8", dark green and semi-solid. The other two drops were smaller and lay parallel to the larger one. I took regulatory control action by stopping the line. I informed day shift Plant Manager, of my findings. The contaminated carcass was condemned. The plant initiated immediate corrective actions. This establishment has identified fecal material as a hazard in its hazard analysis and controls this hazard with CCP 3B. This deviation is in violation of 9 CFR 381.65(e) and the establishment's HACCP Plan for CCP 3B. Establishment has received oral and written notification of this noncompliance. Failure to comply with regulatory requirements could result in additional enforcement action as described in 9 CFR part 500. For past similar NR, please see NR No. 0036-2011-17858, written on 05/19/2011. Steps taken to prevent reoccurrence of deviation are still ongoing.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
