Citation: At approximately 2030 hrs. I observed the following noncompliance in the evisceration department. On the overhead rails at the north end of the department where the shackles return to the front of evisceration, I observed a heavy build up of black grease. I immediately notified the 1st Processing Manager to page the Sanitation Manager to the evisceration department and notified him of the noncompliance. was previously notified to address this area, and all rails should be thoroughly cleaned over the weekend. There wasn't any prior action taken by sanitation to correct the deficiency. Also at approximately 2130 hrs. I observed the following noncompliance in the cut-up department. I observed a hole in a water/leak diverter, hung under a box seam above a product conveyor, that was leaking. I also observed an excessive amount of fat, chicken particles and overspray on the outside and inside of the water/leak diverter. and a moldy drain hose from an overhead drip pan. I immediately notified of the noncompliance's. No product or product contact surfaces were involved with any noncompliance's observed. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
