Violation: 381.76(b)

Citation: While performing presentation test on East evisceration line, I observed five (5) "viscera not Uniform" at inspection station # 1 at approximately 0910 hours. The line speed (ls) was [redacted] birds per minute (bpm). As conformance level at 40 or above on a test requires line speed reduction, I notified Ms. the 1st Processing Manager, of my findings. The ls was reduced to [redacted] bpm. Equipment correcctions were made repeatedly by establishment maintenance staff. An establishment Q.A. technician performed several retests.The ls was furthher reduced to [redacted] birds per minute. Finally at approximately 1047 houirs a retest at ls of [redacted] bpm was within accetable conformance level that allowed the ls to go up to [redacted] bpm. The last retest at [redacted] bpm was also at acceptable conformance level that allowed the ls remain at [redacted] bpm for rest of the operation time.

Regulation:

381.76(b) Presentation: Each inspector shall be flanked by an establishment employee assigned to be the inspector’s helper. The one inspector on the SIS–1 line shall be presented every bird. Each inspector on the SIS–2 line shall be presented every other bird on the line. An establishment employee shall present each bird to the inspector properly eviscerated with the back side toward the inspector and the viscera uniformly trailing or leading. Each inspector shall inspect the inside, viscera, and outside of all birds presented.
