Citation: At 2.42 hours, I performed presentation test on chicken carcasses on the west side evisceration line. At inspection station # 2, I observed one errors of no viscera and one error of not hung by two legs. And two errors of contamination inside the carcass. The total score was 41,.The score of 40 or above conformance level requires immediate line speed reduction of 10% of the current line speed. I notified to first processing manager. The line speed was reduced from bpm. to bpm. Plant Q.A. technician performed the retest .His retest was acceptable. This brought back line speed to bpm.At 4:06 hours Final confirmatory test at speed bpm.brought process in control. Frequent noncompliance and/ or lack of effective/preventive measures could result in additional enforcement action per 9 CFR 500.4. Past Similar NRs - Previous Ineffective Plant Actions: previous measurement were ineffective or not properly implemented NR: 39-2011 dated 6/1/2011

Regulation:

381.76(b) Presentation: Each inspector shall be flanked by an establishment employee assigned to be the inspector’s helper. The one inspector on the SIS–1 line shall be presented every bird. Each inspector on the SIS–2 line shall be presented every other bird on the line. An establishment employee shall present each bird to the inspector properly eviscerated with the back side toward the inspector and the viscera uniformly trailing or leading. Each inspector shall inspect the inside, viscera, and outside of all birds presented.
