Violation: 381.65(e), 417.2(c)(4)

Citation: At approximately 1058 hours on 07/21/2011, while performing a zero tolerance fecal check on the west evisceration line, I observed fecal material in one of the ten test carcasses. The fecal material was yellow-brown, semisolid, and located inside the vent opening, approximately halfway between the ribcage and left leg joint. The fecal material covered an area approximately 1/2" by 1/4". I took regulatory control action by stopping the line. I informed Evisceration Supervisor, of my finding. The plant initiated corrective action and the line was restarted. The affected carcass was taken to a reprocessing station to be recleaned. This establishment has identified fecal material as a hazard in their hazard analysis and controls that hazard with CCP 3B. This deviation is in violation of 9 CFR 381.65(e), 9 CFR 417.2(c)(4), and the establishment's HACCP Plan for CCP 3B. Failure to comply with regulatory requirements could result in additional enforcement action as described in 9 CFR part 500. Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
