Citation: At approximately 0525 hours, I was walking through the Evisceration Department, and I observed an auger motor mounted over the east line heart harvest table. The motor has been painted white numerous times. I observed a flake of paint approximately 1/8" in diameter with one edge lifted off the metal of the exposed fan blades. There was no protective housing over the fan blades. There were four hearts on the table under the motor left over from the prior shift's production. I tagged the motor with US Reject tag No. B39801633. This motor and its flaking paint condition has been discussed in meetings with plant management on 07/07, 07/14, and 07/21 this year. At the meeting on 07/28, Maintenance Manager said the motor was painted over the past weekend. I informed Evisceration Supervisor, that an NR will be issued. At 0902 hours, after a new motor was installed over the heart harvest table, I relinquished the motor back to production. Failure to comply with regulatory requirements could result in additional enforcement action as described in 9 CFR part 500.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
