Citation: While performimg presentation test on east evisceration line, I observed 'contamination outside', one (1) error; 'contamination inside', one (1) error; and 'no viscera', one (1) at inspection station # 2. The line speed (ls) was [redacted] birds per minute (bpm). The conformance level (cl) of all errors was thirty two (32). As cl of 25 to 39 on a test requres a retest I notified Ms. the evisceration department supervisor of my findings and that retest was warranted. A plant Q.A. technician performed the retests, Total of twenty three (23) retests were performed on all 3 inspection stations combined. Here are the retests that did not meet the acceptable cl. The retest performed at inspection station # 3 at 0711 hours had' not hung by two legs,' 1 error, 'viscera not uniform', 1 error and 'no viscera,' 1 error; the total of all errors was forty three (43). As the cl of 25 or above on a retest warrants ls reduction by 10% of the current speed, the ls was reduced from [redacted] to [redacted] bpm. A retest performed at 0721 hours failed at inspection station # 1. the errors were 1 'contamination inside' & 1'no viscera' at ls of [redacted] bpm. A retest performed at inspection station # 2 at 0746 had three (3) errors of 'no viscera', the cl of sixty (60). At 0801 hours a retest at the same station had one (1) 'no viscera 'and one (1) 'contamination inside', cl of 26. Finally the retest at 0817 hours was at acceptable cl and it ended the presentation phase at east evisceration line.


381.76(b) Presentation: Each inspector shall be flanked by an establishment employee assigned to be the inspector’s helper. The one inspector on the SIS–1 line shall be presented every bird. Each inspector on the SIS–2 line shall be presented every other bird on the line. An establishment employee shall present each bird to the inspector properly eviscerated with the back side toward the inspector and the viscera uniformly trailing or leading. Each inspector shall inspect the inside, viscera, and outside of all birds presented.
