Violation: 416.13(c)

Citation: At approximately 0415 hrs. I observed the following noncompliance in the cut up department while performing the review and observation component for the 01C02 procedure. The track was backed up with boxed product for stack off, the boxes of product were stacked on top of each other with the bottom of the boxes touching exposed product. Breast line # [redacted] and # [redacted] were backed up with breasts overflowing on to the floor and on top of the box track. I immediately initiated regulatory control action and notified the cut up supervisor to stop the production lines. The lines remained off until all the product involved was recovered and the process was brought back into compliance. The lines remained off until all the product was reconditioned at the product wash station. Approximate down time was 15 minutes. After reviewing the plants SSOP records for the cut up department, no deficiencies were documented prior to my observation of the noncompliance. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
