USDA Inspection Report: 19 Dec 2011

Code: 04C04
Violation: 381.65(a), 381.76(b)

Citation: At approximately 1045 hours while I was performing ISP task 04C04 on the necks at the Post-Chill station, I noticed a chicken head still attached to the neck in the neck combo at the the end of the neck chiller. Mixing of edible and inedible product together in the combo and the chiller creates an unsanitary condition. I took immediate regulatory control action by notifying Miss QA manager and informed her to stop the neck chiller. I tagged the neck chiller with US Retained tag # B39802020 and also placed US Retained tag # B3981297 on the combo of necks. I removed my tag at 1155 am after the neck chiller was cleaned, sanitized and inspected by me CSI The establishment failed to comply with USDA regulation 9 CFR 381.65(a). All affected product was condemned by the establishment. This document serves as written notification of the establishments failure to comply with regulatory requirements and further actions could result in additional regulatory or administrative action as described in 9 CFR 500.
