Violation: 381.65(e), 417.2(c)(4)

Citation: At approximately 0548 hours, while performing 03J01 Zero Tolerance test for the east line, I found one of ten randomly selected birds contaminated with fecal material. The fecal material was on the inside of the bird, on the right kidney, about one half inch from the tail. It was green in color, pasty in consistency, and approximately one quarter inch in size. I informed Mr. (Day Shift Plant Manager) and I informed Dr. my immediate supervisor. The establishment implemented immediate corrective action. This is the last point in the process where preventative measures could be taken prior to product entering the chill system. This deviation from critical limit at CCP 3-B will initiate a review of the establishment's HACCP records (03J02) which will be completed on this lot of product after the reshipment review is signed. This noncompliance is a failure to comply with the following regulations: 9 CFR 417.2(c)(4), and 9 CFR381.65(e). Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
