Citation: At approximately 1915 hours, while performing pre-operational sanitation verification in the Giblet Chilling Department, I observed that the in-feed chute for the neck chiller was lying inside the neck chiller and both the in-feed chute and the rocker arm of the chiller were coated, for a length of approximately 18 inches, with product grease from a prior day's production. I rejected the chiller and informed the sanitation crew of my finding. The in-feed chute and rocker arm were recleaned in my presence, inspected by me and determined acceptable.[newline]At approximately 2028 hours, while performing pre-operational sanitation in the Deboning Department, I observed two pieces of meat, each approximately 1/4" in diameter, on the skinning roller of the Line One breast skinner. There was also a smear of product grease on the inside framework of the skinner. I informed Sanitation Supervisor, of my finding. The area was recleaned, inspected by me and determined acceptable.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
