Citation: At approximately 2330 hrs., while performing the operational SSOP review and observation PHIS task in the evisceration department, I observed the following conditions. The line inspectors were hanging back chicken carcasses on the reprocessing line for further recondition at the reprocessing area. When I proceeded to the reprocessing area I observed the following noncompliance; approximately two dozen chicken carcasses piled up on the reprocessing reconditioning tables, two to three chicken carcasses on each shackle for the hang back racks resulting in additional cross contamination, and the reprocessing line filled to capacity. At that time I did not observe any QA tech in the department taking action so I immediately initiated regulatory control action and stopped the reprocessing line and notified the evisceration supervisor of the noncompliance. After all the chicken carcasses were reconditioned and sanitary conditions were restored to the area I relinquished regulatory control action and started the reprocessing line for operations to continue. After a review of the plants SSOP records for the evisceration department, no deficiencies were documented prior to my observation. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
