Violation: 416.13(c)

Citation: At approximately 0345 hrs., while performing the review and observation PHIS task in the evisceration department, I observed the following conditions. An excessive amount of livers, hearts and gizzards were overflowing at the harvest area/table on to the floor. The area had fat and viscera accumulation on the floor and at the time of my observation the QA person in the department was walking by the area. I asked her if she observed the insanitary conditions in the giblet harvest area and she had informed me that she did but did not have time to take action because she was going to do a test. When I checked the time of the QA person’s next test, it was 15 minutes from the time of my observation.  I immediately notified the line inspector to ring the bell and when the evisceration supervisor arrived to the area I informed him of the noncompliance and QA failure to take appropriate action. After a review of the plants SSOP records for the evisceration department no deficiencies were documented prior to my observations. I also notified the QA supervisor of the noncompliance. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
