Violation: 416.2(b)(2), 416.2(e)(3), 416.4(b)

Citation: On 08-12-10 at 0700 while performing task 06D01 (Facilities and Equipment Standard) I observed the following deficiencies. The boiler room with dirt, cobwebs and other debris along the wall and floor junctions. The drain pipes of the sinks located (1) behind the USDA inspection station, (2) sink located to the right of the door leading to the brake room. (3) Sink located to the left of the door leading to the pinning room. A piece of equipment (Pressure Washer) located in the same area as sink #3 found with rust, no wheels and in an unacceptable condition. The supports for the kill line shackles found rusty. Pipes located on the wall to the right of the door leading to the dock area broken, Dry storage area with boxes of equipment stored on the floor.

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.2(e)(3) Prevent adulteration of product, water supplies, equipment, and utensils and prevent the creation of insanitary conditions throughout the establishment

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
