Citation: The Slaughter HACCP Plan has the following Deficiencies, (1) Plant management was unable to produce documentation for initial validation. (2) Plant management failed to produce any decision-making documents associated with the selection of the CCP. (3) Plant does not have supporting documents which references the monitoring procedures and frequencies as listed in the HACCP plan. (4) Plant management has failed to provide any supporting documents, which supports the verification procedure Establishment HACCP Plans (5) Establishment HACCP Plans records The Carcass Chill Log (CCP 2) and Temperature Log records (CCP-4) do not address initials of person for Direct Observation of Monitoring. (6) This does not comply with the regulatory requirements of 9 CFR 417.4(a) (2) (ii).The Thermometer Calibration log does not contain actual values recorded for processed monitoring procedures.(7) The establishment's Zero Tolerance Log (CCP 1) does not identify the lot code or product name or slaughter production lot.
