Citation: 1. The Raw Not Ground HACCP Plan has the Following Deficiencies (1) The Establishment fails to show and correlate product temperature with cooler temperature during processing to show process control of pathogen growth. Establishment monitors cooler temperature once per day.(2) Establishment failed to identify specific pathogens of concern for food borne illnesses at all process steps in the hazard analysis and does not meet the requirements of 9 CFR 417.2

(1) Every establishment shall develop and implement a written HACCP plan covering each product produced by that establishment whenever a hazard analysis reveals one or more food safety hazards that are reasonably likely to occur, based on the hazard analysis conducted in accordance with paragraph (a) of this section, including products in the following processing categories
