Violation: 416.4(b), 416.4(d)

Citation: On 03/03/11 at approximately 13:15 while performing procedure code 01C02(Operational Sanitation), I observed several pieces of chicken fat and feathers on diagonal support beams directly above storage bins that contain cubed ice. These bins are located in dock cooler and this ice is then used to further cool and process various products. I placed Retain Tag #B35199380 on these two ice bins, and notified QC Manager, of this non-compliance. He took immediate action and had the bins removed from cooler and the ice dumped, then the above mentioned beams were cleaned and sanitized. Ice bins were also cleaned and sanitized and I then removed Retain Tag from these bins. After reviewing plant's SSOP records I observed that latest operational entry was at 10:50 AM and no deficiencies were found. No product was affected because of this non-compliance, as the ice in question was in storage and never used in production area. This is a deviation from plants SSOP and a noncompliance with Meat and Poultry regulations 9CFR416.4(b) and 9CFR 416.4(d). Failure to control and or eliminate these types of noncompliance's could result in further regulatory and or administrative control measures.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
