Citation: On this day at 0845hrs, Inspection performed an 03J01 verification procedure concerning CCP1B--visible examination of turkey carcasses before trussing/zero visible fecal. Bird #8 of 10 was observed to have fecal material as follows: 3 small green/brown areas of fecal on the left inside of the breast cavity opposite the abdominal area, 1 small area of green fecal centrally located on the keel bone in the breast cavity in the thoracic area. Fecal was paste like with no visible plant material. Also observed was particulate matter (granular and yellow) was observed on the left inner thigh where it appeared the opening cut of the bird penetrated the thigh muscle itself. was verbally informed of findings made by Inspection, shown the fecal which would have entered the chill system, and was advised to begin corrective actions concerning the deviation from the critical limit. Observation by Inspection represents a violation of 9 CFR 417.2(c)(4) states "List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;", and 9 CFR 381.65 which states "Operations and procedures, generally. (e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank." was informed of this non-compliance with regulations verbally and was informed in writing with the issuance of this Non-compliance Report.

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
