Citation: On this day at 1430hrs, Inspection performed an 03J01 verification procedure concerning CCP1B--visible examination of turkey carcasses before trussing/zero visible fecal. Bird #4 of 10 was observed by the IIC to have fecal material under the skin bar which is left intact for trussing of birds. The skin bar was cut in the presence of production lead to facilitate more thorough inspection. At this time it was confirmed to be a clump of fecal --which was plant material held together with paste like material, and was approximately 1/2 inch by 1/2 inch, and 1/4 inch thick. and were also informed of the findings at this time, and advised to begin corrective actions. Inspection then proceeded to continue with the remaining birds of the check, bird #8 was also observed to contain a possible fecal clump of plant material held together by paste like material. This clump was approximately 1/8 in total size, and was found on the inner cavity of the right breast. This bird was also shown to . Both birds in question were moved to dirty bird reprocessing. Observation by Inspection represents a violation of 9 CFR 417.2(c)(4) states "List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;", and 9 CFR 381.65 which states "Operations and procedures, generally. (e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank." was informed of this non-compliance with regulations verbally and was informed in writing with the issuance of this Non-compliance Report. Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
