Citation: On Thursday, October 13, 2011, at approximately 1300 hours Inspection performed an 03J01 verification procedure concerning . Bird # 3 of 10 was observed to have fecal material between the left outside portion of the breast and the skin and connective tissue near the thigh. Fecal was yellow and paste like with no visible plant material contained within it. Immediate regulatory control action was taken. Plant personnel were shown the noncompliance and verbally informed of the deviation from a critical limit. Corrective actions were immediately initiated. IPP was informed that Supervisor lead immediately informed QA who immediately increase chlorine in chiller. then removed contaminated bird for reconditioning. Supervisor lead immediately reduced line speed. Zero tolerance checks would be increased for the remainder of the day. This document serves as written notification of the failure to meet 9 CRF 417.2(c)(4) states "List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;" And 9 CFR 381.65 which states "Operations and procedures, generally. (e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank."
