Citation: At approximately 1310, I observed that the side of the giblet pack wrapper machine was open and an employee was scooping hearts and livers from inside the machine and placing them on the round tray on the top surface of the giblet pack wrapper. The round tray collects hearts and livers that exit the chilling cylinder and are conveyed by belt to drop on the round tray. I immediately applied retain tag B24107528 to the giblet pack machine. Two establishment employees placed the hearts and livers that were in the round tray in a condemned barrel. Mr. plant manager, was informed of the noncompliance. Mr. stated that he was collecting a sample from hearts and livers that were still inside the machine to send to a laboratory for testing. Mr. placed several hearts and livers in a plastic bag. The employees recleaned the round tray from the top of the giblet pack wrap machine and the US retain tag was removed. The establishment is in violation of 416.4(d) which states “Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from from official establishments.”
