Citation: At approximately 0715, I observed a turkey making conscious movements by raising its head and flapping its wings as it entered the scalder. I informed and then stated that the establishment had just switched to atmosheric stunning. The majority of turkeys at the establishment are slaughtered through the atmosheric stunning method. stated that a little over [redacted] turkeys were slaughtered by electiric stunning and neck cutting this morning. The establishment is in violation of 381.65b which states that “poulty must be slaughtered in accordance with good commercial practices in a manner that will result in thorough bleeding of the carcasses and ensure that breathing has stopped prior to scalding. “

Regulation:

381.65(b) Poultry must be slaughtered in accordance with good commercial practices in a manner that will result in thorough bleeding of the carcasses and ensure that breathing has stopped prior to scalding. Blood from the killing operation must be confined to a relatively small area.
