Citation: On Thursday, November 17, 2011, at approximately 0800 hours Inspection performed a zero tolerance verification procedure concerning CCP [redacted] Bird # 9 of 10 was observed to have fecal material (greenish/brown in color and pasty is substance) approximately a inch by inch smear in the left inside near the vent opening. IPP also observed a greenish brown smear approximately 1/8 inch wide by 1/8 inch long embedded in the fat on the right side near the vent opening. Immediate regulatory control action was taken. Plant personnel, QA and supervisor were shown the noncompliance and verbally informed of the deviation from a critical limit. [newline]The contaminated bird was removed from the AQL table for reprossing.[newline]Corrective actions were immediately initiated. [newline]This document serves as written notification of the failure to meet 9 CRF 417.2(c)(4) states “List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;”[newline]And 9 CFR 381.65 which states “Operations and procedures, generally. (e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.” [newline]
