Citation: On June 24th, 2010 while walking through the Whole Bird cooler, I observed water droplets on the ceiling over top of the box lid chute and over top of a pallet of box lids, dripping into the box lids, also observed droplets above where a pallet of bagged iced was located, this ice is being opened and dumped into a gray plastic tote, I tagged the tote with USDA Rejected tag # B38-670042 and informed QA Lead & , Shipping supervisor of my findings, I also observed condensation droplets in the box lids by the product conveyor belt. After further investigation it was discovered that the Stainless steel drip pan had no lip on the back half of the pan and the condensation was running off of the pan. There were 4 ceiling tiles out of place and multiple other areas of the cooler that had water droplets. CSI applied USDA Rejected tag # B39-801783 to the strip doorway and no product or employees were allowed to enter the cooler until maintenance resolved the issue. Total downtime for the whole bird cooler was 1 hr & 15 minutes. This is in violation of 9 CFR 416.2(d). Establishment management has received oral & written communication concerning this noncompliance. This document serves as written notification that your failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR 500. Past Similar NRs - Previous Ineffective Plant Actions: Plastic will be hung on heavy condensation days. NR: 67-2010 dated 6/15/2010; NR: 66-2010 dated 6/14/2010; NR: 59-2010 dated 5/28/2010


416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
