Citation: At 0410 hrs. while performing ISP 01B02 (Pre-Operational Sanitation) I observed the following noncompliance's : Turn wheels in blood room build up of dust, blood, and feathers. Electric control panel room in picking room 1 cockroach. In the evisceration room 2 dead end pipes located near the west vent machine and the west eviscerating machine area. Step area from thigh debone to evisceration broken light shield, trussing area cracked light cover, broken light end in the New York room. I notified Mr. and Mr. of the noncompliance's and informed them I would be issuing an NR. At approximately 0655hrs. I entered the Weigh/Price box room and observed an open box of rolls of labels for different products had spilled on the floor. I notified Ms. of the noncompliance, the labels were placed in the trash. At approximately 0935 hrs. Inspector observed and killed a cockroach in the USDA office which is located off the evisceration department on the 2nd floor and informed Mr. (SCSI) who notified Mr. of the sighting. Management has received oral and written notification of the noncompliance. Failure to comply with regulatory requirement could result in additional regulatory action as described in 9 CFR Part 500. Please refer to NR 0071-2010-143446 for Preventive measures which were either ineffective or not implemented.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
