Violation: 416.13(c), 416.4(a)

Citation: At approximately 0440 hrs., while performing ISP task 01B02 (Pre-operational Sanitation) in the packing area, I observed the following noncompliance's: Post chill station; I observed several small pieces of fat and meat on the top surface of the station. The belt at the Trussing area had six (6) black grease specks on the top surface of the belt, and the [redacted] sealing machine for the package bag; in the seal track there was unidentified material and what appeared to be dried meat. In white meat debone area I observed meat particle on the trim belt and on #3 cone line belt. In the cut up department I observed black UFM specks on the back belt and on the thigh belt. I notified Mr. of all of the above noncompliance's and notified him that an NR would be issued. The items were cleaned and released. Management has received oral and written notification of this noncompliance. Failure to comply with regulatory requirement could result in additional regulatory action as described in 9 CFR Part 500. Past similar NR 0069-2010-17446 Preventive Measures were either ineffective or not implemented.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
