Citation: At 0710 hours, while observing the operations being conducted within the establishment, I observed condensation on the inside of the top cover of the box track leading into the whole bird cooler. I stopped the track and notified Mr. of the noncompliance, I remained in the area until the condensation had been removed and I released the box track to production. I notified Mr. that I would be issuing an NR for this noncompliance. The establishment has received oral and written notification concerning this noncompliance. Past similar NR- Previous preventive measures were either not implemented or were ineffective in preventing the recurrence of this noncompliance. Please refer to NR#0073-2010-14346 Dated 06/24/2010. This document serve3s as written notification that failure to comply with regulatory requirements could result in additional enforcement action as described in 9 CFR part 500.


416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
