Citation: At approximately 0440 hours, while performing Pre-operational sanitation in the thigh debone department, I observed a build up on the refrigeration unit in the ceiling. I requested from Mr. (3rd shift maintenance supervisor) that he furnish me with a ladder to examine the unit closer. I observed that the unit had both pink and black mold growing on the front and top of the unit along with a greasy build-up on the top and sides. I notified Mr. that the units in the department need to be cleaned and that I would be issuing a NR for the noncompliances. I rejected the department by applying US Reject Tag # B39801552 . At approximately 0500 hours, I requested from Mr. a ladder be placed in the Breast Debone department so that I could examine the refrigeration units I observed small pieces of meat and fat along with a slimy build up in the drip pans of the units in the department, rejecting the units with US Reject tag # B39801551. There was also a build up on the fins of the units that Mr. said would need a de-greaser applied to them to clean properly. I notified Mr. that a NR would be issued for the noncompliances. At approximately 0545 hours, Ms. requested that I re-inspect the Breast Debone department at which time I found the department acceptable and released it to production. I re-inspected the Thigh debone department at 0550 hours and found it acceptable and released the department to production Establishment management has received both oral and written notification concerning this noncompliance. Past Similar NRs- Previous Ineffective Plant Actions: Please see plant responce on file. The establishment previous measures were either not implemented or were ineffective in preventing the recurrence of this noncompliance. NR 0080-2010-17446 Dated 07/14/2010. 416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
416.4(b) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
