Citation: At approximately 0545 hours I entered the Tray pack department and I observed over the one tray line condensation on the ceiling and a ceiling tile that was out of place. I took regulatory control action by stopping the operation and notified Mr. (Tray Pack Supervisor) of the noncompliance. I remained in the area until the noncompliance was corrected by Mr. and released the department to production. I notified Mr. that a NR would be issued for this noncompliance. Past Similar NRs- Previous Ineffective Plant Action: NR 0083-2010-14346 Plants Preventive Measures: (3) QA Technician(s) will inspect the Tray Pack department, Cut Up department and Cut Up cooler within 15 minutes of startup for condensation. Continued failure to meet regulatory requirements could result in additional enforcement action as described in 9 CFR 500

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
