Citation: At approximately 0650 hrs, as I entered the cut-up department, I observed a drip of water fall from the side of a light at the hanging belt for the cut up line. I approached the line to observe closer and observed another drop fall from the same area, I then observed the drops of water on the ceiling seam above the light dropping on to the light. I took regulatory control of the cut-up line and stopped the operation. I notified Mr. cut-up department (lead person) that I had taken regulatory control of the cut-up line, at which time the line started to move again, I notified the hanger at the belt to stop the cut-up line again and discovered that Mr. had restarted the line with out knowing why it had been stopped. I notified Mr. (Second Processing Supervisor) of the noncompliance and informed him that a NR would be issued for the noncompliance. The leak in the ceiling had been identified on an establishments work order on 08/27/2010, work order # 3502 signed by Mr. . I remained in the area until plastic was put in place by Mr. , at which time I released the cut-up line to production. Past Similar NRs Previous Ineffective Plant Action: NR # 0092-2010-17446 Dated 08/26/2010 for which no corrective action has been given as of this date.


416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
