Address: 2609 U.S. Rt 22, Fredricksburg, PA 17026
Establishment No.: p493

USDA Inspection Report: 8 Sep 2010

Code: 03J01
Violation: 381.65(e), 417.2(c)(4)

Citation: On 9/08/2010, at approximately 0516 hours, I performed verification of the establishment's monitoring of CCP 1B, online zero tolerance for fecal on the west evisceration line (ISP code 03J01). In 1 out of 10 randomly selected carcasses, I observed a light brown fecal material. The fecal material was semi-solid in consistency, about 1/4" by 1/4" in size, and was located on the interior surface of the tail. I took regulatory control of the west evisceration line and immediately notified the following individuals: Mr. (SCSI) (Evisceration Supervisor), Mr. (1st Processing Superintendent), and Ms. (QA Rep.) I observed the establishment implement immediate corrective actions. This is a failure of the establishment's HACCP plan for CCP 1B as well as 9 CFR 381.65(e) and 417.2(c)(4). Establishment management have received oral and written notification concerning this noncompliance. Past Similar NRs. - Previous Ineffective Plant Actions: See NR in USDA File for Previous Preventive Measures NR 0086-2010-17446 Dated 08/02/2010. The previous measures were either not implemented or were ineffective in preventing the recurrence of this noncompliance. Continued failure to meet regulatory requirements could result in additional enforcement action as described by 9 CFR 500.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
