Citation: At approximately 0743 hours, while performing ISP task 04C04 AQL on the giblets to insure that the establishment was meeting the Ready To Cook requirements for giblets and necks. I found the following defects on the 10 neck random sample: 2 Ingesta (minor), 4 Feathers or Protruding Pinfeathers (Minor), 1 Crop (major), 1 Windpipe (major), 2 Esophagus (major), 3 Incomplete trim (major) which exceeded the Absolute limit per Subgroup of 5 Majors and total defects of 14 with 7 major defects. I notified Mr. (First Processing Superintendent) and Mr. (Second Processing Superintendent) of the test results along with Ms. QA Rep. of the failure to meet Ready to Cook standards. I retained the product with US Retain tag # B39801690. Establishment management has received both written and oral notification concerning this noncompliance. Continued failure to meet regulatory requirements could result in additional enforcement action as described by 9 CFR 500
