Citation: At approximately 0424 hours, while performing preoperational sanitation verification in the Evisceration Department, I observed greasy product residue from a prior day's operation on the insides of two eight-foot lengths of neck pipes. I also observed product build-up on the stop button above the east line house trim station. I rejected the equipment and informed the sanitation supervisor of the deficiencies. In the Packing Department, I observed product residue on the rocker arm of the liver chiller and greasy product residue on a guidebar over the whole bird bagging station. I rejected this equipment also. At 0443 hours, I reinspected the neck pipes, stop button, rocker arm, and guidebar and determined them acceptable. I informed QA techthat an NR would be issued. These deficiencies are in violation of 9 CFR 416.13(c) and 416.4(b), as well as the establishment's Sanitation Standard Operating Procedures. Plant management has received oral and written notification of this noncompliance.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
