Violation: 381.65(e), 417.2(c)(4)

Citation: At approximately 0545 hours, while performing a zero tolerance fecal check on the east evisceration line, I observed two drops of brown, semi-solid fecal material inside one of the test carcasses. One drop, approximately 1/16" in diameter, was located on the breast halfway between the breast keel bone and the thigh joint. The second drop, approximately 1/4" in diameter and smeared at its edges, was located on the tip of the breast keel bone at the vent opening. I took regulatory control action by stopping the line. I informed , First Processing Superintendent, of the noncompliance. The establishment initiated corrective actions. The contaminated carcass was taken to a reprocessing station to be cleaned. This noncompliance is in violation of 9 CFR 417.2(c)(4), 9 CFR 381.65(e), and the establishment's HACCP Plan for CCP #1B. Plant management has received oral and written notification of this noncompliance. Past Similar NRs - Previous Ineffective Plant Actions: The department superintendent or designee will do the following on a daily basis and document through November 19, 2010: inspect check forms of maintenance mechanics, and inspect the alignment of the IOBW. NR: 108-2010 dated 11/1/2010

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
