Citation: On 12/21/2010, at approximately 06:38 hours, I performed a presentation verification (ISP Code 06D02) at the second inspection station on the West evisceration line. At a line speed of [redacted] birds per minute (bpm), presentation failed with a 10 bird total nonconformance weight of [redacted] This failure consisted of 1 contamination on viscera (6 nonconformance factors), 5 membranes (2 nonconformance factors each), & 1 contamination inside bird (6 nonconformance factors). I immediately notified (Evisceration Group Leader) of the establishments failure to meet regulatory requirements, I also requested that QA perform presentation retests. QA Failed 2 consecutive retests and the line speed fell to [redacted] bpm. Plant stated that they would remain at 61 bpm until finished with the lot. At approximately 11:17 hours, I performed a presentation verification (ISP Code 06D02) at the first inspection station on the East evisceration line. At a line speed of [redacted] birds per minute (bpm), presentation failed with a 10 bird total nonconformance weight of [redacted] This failure consisted of 2 viscera not uniform (8 nonconformance factors each), 1 opening cut (1 nonconformance factor), 2 parts inside (1 nonconformance factor each), & 1 contamination inside bird (6 nonconformance factors). I immediately notified (Evisceration Group Leader) of the establishments failure to meet regulatory requirements. I also requested that QA perform retests. QA retest passed at 11:29 hours.

Regulation:

381.76(b)(1)(b) The Administrator determines that the establishment has the intent and capability to operate at line speeds greater than 70 birds per minute, and meets all the facility requirements in 381.36(d).
