Citation: At approximately 1530 hours while performing ISP code 03J02 Recordkeeping review I detected the following noncompliance: On Form # 10 for Pre-Shipment verification of Finish Product by Lot dated 01-03-2011 for Night shift all the CCP's were listed and Acceptable, the Q. A Tech signed the document, the pre-ship verify was acceptable also. At the bottom of the page there is a line that asks for the: HACCP Coordinator verified (his or her signature) and for the date and the time these spaces were left blank. I immediated informed Mr. 1st Process Supervisor and Ms. Supervisor of my findings. Management was given both oral and written notification of this noncompliance. This establishment is not following 9cfr 417.5(c) which states: Prior to shipping product, the establishment shall review the records associated with the production of that product, documented in accordance with this section, to ensure completeness, including the determination that all critical limits were met and, if appropriate, corrective actions were taken, including the proper disposition of product. Where practicable, this review shall conducted, dated, and signed by an individual who did not product the record(s), preferably y someone trained in accordance with 417.7 of this part, or the responsible establishment official.

Regulation:

417.5(c) Prior to shipping product, the establishment shall review the records associated with the production of that product, documented in accordance with this section, to ensure completeness, including the determination that all critical limits were met and, if appropriate, corrective actions were taken, including the proper disposition of product. Where practicable, this review shall be conducted, dated, and signed by an individual who did not produce the record(s), preferably by someone trained in accordance with 417.7 of this part, or the responsible establishment official.
