Citation: At approximately 0545 hours, I observed a six-foot long piece of soft plastic hanging by both its ends from an overhead pipe in the injection marination area. The plastic had been hung because the pipe and/or its insulation was leaking water. The pipe's insulation had been removed. There was a puddle of water, approximately one cup, and a 1/2" square piece of brown UFM in the plastic. The date on the plastic was 01/10/11. I informed , director of QA, that I would be issuing an NR, for permitting an insanitary condition. Changing hanging plastic on a daily basis has been discussed in weekly meetings with the establishment management, most recently on 01/05/2011. Plant management has received oral and written notification of this noncompliance.

Regulation:

416.2(e)(3) Prevent adulteration of product, water supplies, equipment, and utensils and prevent the creation of insanitary conditions throughout the establishment;

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
