Citation: At approximately 1300 hours inspector pulled aside one carcass with black grease contamination on the flap and legs. Additionally throughout the production morning, line inspectors reported an increase of grease contamination on carcasses. During break the grease contamination apparently subsided briefly and increased again around 1200-1300 hours. Inspection of the rails and shackles on the east line revealed moderate accumulation of grease. (1st processing Superintendant) was informed of the problem. The establishment has failed to prevent the recurrence of product contamination by rail grease. This is a noncompliance, failing to meet 9 CFR 416.4 (d), which states that "Each official establishment shall routinely evaluate the effectiveness of the sanitation SOP's and the procedures therein in preventing direct contamination or adulteration of product(s) and shall revise both as necessary to keep them effective and current with respect to changes in facilities, equipment, utensils, operation, or personnel. A previous NR involving the same cause was written on 1/14/11, and the issue of rail grease contamination has been brought up during 1st shift weekly minutes 11/07/10, 11/24/10, 12/08/10/ and 12/15/10. The issue was also addressed during 2nd shift meeting minutes on 1/05/11. On consulting with (OA), I was informed that maintenance will be working on the newly installed cleaning system immediately to increase cleaning efficiency. This should be done by tomorrow morning (1/18/11).

Regulation:

416.14 Each official establishment shall routinely evaluate the effectiveness of the Sanitation SOP’s and the procedures therein in preventing direct contamination or adulteration of product(s) and shall revise both as necessary to keep them effective and current with respect to changes in facilities, equipment, utensils, operations, or personnel.
