Citation: At approximately 0445 hours, I was performing pre-operational sanitation verification in the Packing Department. There are pipes permanently installed in the ceiling, between the Evisceration Department on the second floor and the Packing Department on the first floor, to permit giblets harvested on the second floor to be piped into their chillers on the first floor. On inspecting these pipes, I observed product residue buildup in the pipes for livers and hearts, and product grease in the pipe for necks. I rejected these pipes and informed , sanitation lead, of my findings. I also observed black mold covering an area approximately one inch by twelve inches on a ceiling tile above a light fixture at the south end of the giblet chillers. At approximately 0503 hours, I reinspected the pipes and ceiling, determined them acceptable and released the area to production. I informed , QA tech, that I would be issuing an NR. Plant management has received oral and written notification of this noncompliance.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
