Citation: On 03/09/2011 while walking through the Tote Wash room I noticed on the ice pipe over top of the clean plastic tote lids condensation dripping onto the lids. I immediately had the tote wash machine stopped and I tagged the lids with a US Rejected tag, # B39-801530. I informed 2nd Processing Superintendent of my findings. This subject of heavy condensation in the Tote wash room, has been discussed in weekly USDA/ Plant meetings on 03/02/11 & 02/23/11. Dr. found several cracked ceiling tiles throughout the second processing areas of the establishment. (Packing Supervisor) & (QA Group Leader) were shown these deficiencies. There are also two pipes located in the Evisceration department that are rusty and they have been wrapped in plastic, they are located were the evis line levels out coming from downstairs. (1st Processing Superintendent) has been made aware of this deficiency, also in the Evis department all the fans in the department, and ventilation louvers in the ceiling need cleaned, black buildup on inside and outside of fans. The establishment management has received written and oral notification of this noncompliance.


416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
